Need A Way To Entertain Your Kids – Get Them Making Ice Cream In A Bag
I love to make Ice Cream. All sorts and every type of method. This method makes just one serving, but it’s really great especially if you get kids involved. I have also done this at a dinner party, getting my guests all making their own serving. Very cool. (You don’t know my friends). It’s also great if you are babysitting some kids and don’t know what to do with them. They really love this.
What you will need to have ready for this.
You will need about a half cup of milk. Some people use cream, that’s ok too. But this tastes just fine with milk. You can even go half and half if you want.
Some sugar, about a tablespoon will do.
Chocolate syrup or cocoa power or vanilla extract. About a 1/4 teaspoon.
Ice. Fill up your ice trays the day before, or if you forget, just nip out and buy some, it’s cheap.
You will need either rock salt or table salt for this method. Either is fine, though I think rock salt may be cheaper to use.
2 plastic bags. I quart sized and 1 gallon sized. Remember you can improvise with this. It’s just a rough guide.
Music that you can shake and move your butt to. Or just your kids favorite music.
So now let the games begin.
Mix the milk, flavoring and sugar all together in a bowl. That was easy. Once mixed put in the smaller bag and seal tightly, so that it cannot escape.
Put the Ice (about 2 quarts) into the bigger bag with the salt. As a rough guide the big bag should be about half full with the ice and salt.
Now take the small bag and put it into the big bag. The most important thing here is to make sure that both bags are are sealed really well as you don’t want them mixing together. You can use tape if needed, that’s fine.
Now put on some great music and shake those bags, shake them and agitate them and massage them, (be careful not to split them). You can do this for between 10 – 15 minutes. In this time your mixture will have turned into solid ice cream. Magic! Now eat and enjoy!

Many college students own toaster ovens due to their compact size. They can easily fit on a countertop and they do not cost much to operate. They are great for baking pizzas, re-heating food and making quick grilled sandwiches in.
If you like to make mixed drinks, juices or smoothies, then you must have a blender. Blenders can even crush ice which is terrific during the hot months of the summer.
The variety of small kitchen appliances available today is vast and you really must think about what your own personal needs are in the kitchen when thinking of purchasing this equipment. If you bake, you will probably need a food processor, but perhaps you have no need for a blender. We all have different needs and there is a kitchen appliance for all of us.

Cooking in Parchment: Fun, Easy, and Tasty
An easy way of cooking healthy meals is to use parchment packets, or papillotes. The food remains moist and tender, while the natural sweetness in the food comes out due to the steaming that takes place. Parchment packets are fun, too. The packets puff up like small balloons during cooking. Your family will not know what is awaiting them until they open their own individual packet, which will release an enticing aroma when opened.
If you do not have any parchment paper handy, you can try this method out with brown lunch bags. If you do have some parchment, it is easy to use. Fold a large sheet in half. Cut along the fold, making a large Valentine heart. You will need one for each person you are feeding. Open the heart on the counter. Center your food on one half of the heart. Add the seasonings and sauces and top with aromatics like herbs or lemon slices. Seal up the packets by folding the empty half of the heart over the food. Starting at the rounded end, make small folds toward the food. Continue in this manner all around the edge. When you get to the point, refold it several times to complete the seal. Tuck it under the packet. Move the packets onto a baking sheet and cook according to your recipe.
Benefits of Cooking in Packets
Cooking in parchment makes clean up easy, and your family will find it fun to open their meals like a present. This method is also very healthy. Steaming the food uses little fat, so your food remains healthy and fresh. Only a little bit of oil or butter is needed instead of coating a pan with it. Parchment cooking is also a gentle method for cooking delicate foods like some types of fish.
You can find the parchment paper at the grocery store along with waxed paper and foil. If your store does not carry parchment, foil will work for packets too.

When you use parchment, you want to prepare your vegetables in small, even pieces. By slicing them thinly or using a julienne technique, they will cook quickly and evenly. You may want to try carrots, mushrooms, shallots, celery, or zucchini. Add some aromatic herbs for full flavor.
Place your packets on a cookie sheet and bake in a 400-degree oven for 6 to 10 minutes. Once the timer dings, dinner is ready!

Raw, unroasted chocolate IS A MUST to really reap the health benefits. Little of this fact is given weight in the mass-media’s portrayal of chocolate’s health benefits, but its the crucial point for anyone interested in bettering their health naturally. There’s a big difference in the chemical composition of un-roasted, naturally-dried chocolate when compared to 99% of the chocolate products available today. Nearly every single chocolate bar or drink, even at the large-chain heath food markets, is made from chocolate that’s been roasted at high temperatures. ‘Organic’ does not mean raw; chocolate powder is not raw unless it says its raw. High-end organic hot chocolate drinks are still roasted, and likely processed with alkali to make them dissolve more easily. Why the roasting and processing? Because we’ve become accustom to chocolate looking and tasting like it has since our childhoods. Working with raw chocolate (called Cacao – note this is different than Cocoa!), like so many things that are really good for you, is best prepared at home using carefully selected ingredients. It’s easy to do, and we’ll include some recipes at the end. But first back to the question of why raw is better.
Energy and stimulation is at the heart of the chocolate experience, but many people are sensitive to chocolate’s effects. There are however, significant differences in the alkaloid structures of raw and roasted chocolate. Raw chocolate’s stimulation comes primarily from theobromine, which has little anxiety producing effects. Studies by natural wellness professionals and user reports both note that while commercially prepared dark chocolate has a very stimulating action that caffeine sensitive individuals may find too strong, an equivalent amount of raw cacao does not. The stimulating effects are reported mild, gentle, and without a ‘crash’ that is often associated with caffeine. A reason for mothers to think about creating their own raw chocolate treats for their children, too. The jury is still out on the actual amount if caffeine in raw chocolate; some investigators have found none, some have found small amounts in the ’skin’ of the cacao beans, and others of found only small amounts in beans that have fermented somewhat (an indication of a lower-quality cacao). Either way, if you’ve refrained from chocolate because of it’s caffeine content, raw cacao may just be your answer to enjoying this treat again.
Next the question of anti-oxidants. Chocolate has been discovered to have exceptionally high quantities of important polyphenols. A study published in the Journal of Agriculture and Food Chemistry was titled: “Cocoa Has More Phenolic Phytochemicals and Higher Antioxidant Capacity than Teas and Red Wine.” It’s hard to argue with that. Here again the question of raw arises: One report notes that while roasted chocolate is made up of 5% antioxidants, raw chocolate contains twice as much at 10%. Another important note is the addition of milk to make milk chocolate. Research has shown that the addition of milk actually cancels-out the positive effects of chocolate’s antioxidants. And milk may be one of the reasons many people seem to be allergic to chocolate, as lactose intolerance is fairly common. Another chocolate myth is some individuals break out when ingesting high amounts; reports indicate that raw chocolate does not cause this response, and that it may be the refined fats and sugars present in most chocolate products producing this effect.
Finally, the question of mood-enhancing neurochemicals and precursors. Chocolate contains significant quantities of the essential amino acid tryptophan. Tryptophan intake has recently been collated with neurogenesis, the development of new brain cells, and both long and short term memory. The presence of tryptophan is critical for the production of serotonin, a primary neurotransmitter associated with mood (Prozac works on the principal of enhancing the action of serotonin). Once in the body tryptophan reacts with vitamins B6 and B3 in the presence of magnesium (all present in raw chocolate) to produce serotonin. Enhanced serotonin function assists in diminishing anxiety and stress – ccording to Dr. Gabriel Cousens, serotonin is literally our “stress-defense shield.” Tryptophan is heat sensitive and is often deficient in many cooked-food diets, even when animal protein intake is high. In addition to tryptophan (but not heat sensitive) chocolate also contains PEA, the ‘love hormone’ and Anandamide the ‘bliss chemical’.
Convinced? Ready for a little raw chocolate power? First its critical to find a good source; make sure the chocolate you’re buying is raw – it’s most often labeled as ‘Cacao’, the name for the raw chocolate beans and the tree on which they grow. Cacao nibs are small pieces of pure raw chocolate that can be eaten straight, or mixed with other healthy snacks like dried fruits. But the best-loved raw chocolate preparation is the original chocolate drink: hot chocolate. Now it won’t be hot enough for long enough to convert any chemicals or to cook the chocolate, just to make it a warm comforting drink – and of course, heating the water isn’t necessary at all (though in recipes calling for Coconut oil, it helps to blend the oil into the drink). So to make a cup, use powdered raw chocolate (grinding the nibs or beans in a coffee grinder can work, though you’ll find this challenging as the natural oils in the chocolate will heat up and liquefy before the grinding is complete, leaving little crunchy bits). Put one or two tablespoons powdered chocolate, one to two teaspoons raw dark agave nectar (a low-glycemic index natural sweetner) and one to two teaspoons of Coconut oil in a blender. Add eight to twelve ounces almost-boiling water and blend for ten seconds. That’s it! You’ll find your personal favorite formula after a few preparations – more or less chocolate, oil, sweetener or water.
There are many, many recipes available online and in books about raw chocolate. Some favorite additions to the drink are Maca, cinnamon, tocopherols (a form of Vitamin E), and for the truly hard core, blue green algae and spirulina. Your own raw chocolate bars are very easy to make, really just by omitting the water and adjusting the oil and sweetener ratios to make a thick chocolate paste. Add some chopped nuts if you like, press into a casserole dish and put it in the refrigerator long enough to make it firm. Experiment; it’s chocolate! You’re supposed to have fun. And with raw chocolate, it might be the most fun you can have eating while positively benefiting your health.

The Mexican table is usually filled with a large assortment of foodstuffs from soups, sauces to stews. Most of the Mexican food recipes are prepared in a wide range of ways, anywhere from slow roasting to quick-fry. Mexican food recipes have some key elements that can be found in virtually all Mexican diets.
One of the key elements is corn. Corn is commonly used while preparing tortillas or tacos. Tacos are actually tortillas with fish, beef, chicken or cheese stuffed in it. Another key element in Mexican food recipes are the chilies. Chilies can usually be cooked either in their fresh or in their dried up state. Tomatoes are another key element in Mexican food recipes. One common example of their use is in the preparation of salsa Mexicana. They are also used in beef and fish servings to spice them up. A small green tomato type called tomatillo that has a stiff husk is used in making tomatillo salsa. The recipe also includes lots of chilies to spice up the food.
Fruits are another key element in Mexican dishes. Fruits are mostly used in desserts and fruit sauces. Common fruit types are papaya, coconut, pineapple and others. In most cases, they are eaten raw. Some fruit types like nopales are used as a vegetable of sorts and are used to add a sweet taste to desserts. Other ingredients in Mexican foods are squash blossoms, pungent herbs like romeritos and epazote, and pumpkin seeds.
Mexican food recipes require that chilies and spice ingredients be cooked in a certain way. Chilies are required to roast, be cleaned and then peeled along one side so that it can be easy to reconstruct them after stuffing them. Chilies are added to meat after the meat has first been boiled and spices and garlic are added 15 minutes later.
When preparing sauce, first boil the water and add garlic, onions, chilies and other spices as stipulated. After boiling for 30 minutes, drain the mixture and reserve the resulting liquid. From here, add the necessary ingredients following the recipe. Then season to taste. Both the red and green sauces are prepared using this method. What would life be without spices? Even the commonplace salt and black pepper elevate our food to heights that are unattainable without them. Garlic adds yet another dimension to our plates. Without spice, our food is bland and unappetizing. With spice, it climbs to culinary perfection.
As the world gets smaller, we get to try more cuisines. This introduces us to spices we may not have tried before. Keeping Spices

Each spice can have a different shelf life. Check the ones in your cupboard periodically to check for freshness. Look at the color… is it faded? Is the scent still strong? Remember that whole spices will keep for a longer time span than those that are ground. It also depends on what part of the plant your spice is from.
For whole spices, remember that leaves and flowers may last up to a year. Roots, seeds, and barks can retain their goodness for over two years. Ground spices have a shorter life span. Leaves, seeds and barks will be good for about six months, while roots will remain fresh for up to a year.
Ethnic Cooking
There are many ethnic recipes that require special spices to give them their unique flavor. For example, if you want to make chicken enchiladas, you may need cumin, chilies, cilantro and garlic to create an authentic Mexican flavor.
Likewise, for a Moroccan dish, you may require spices such as cinnamon, allspice, coriander, and cumin. For a Cajun dish, you would want to keep sweet paprika, hot paprika (yes, they are different), and both black and white pepper on hand. Japanese spices may include shiso, chili flakes, and mustard seeds.
Exploring the world of spices can be fun and you may find new spices that you truly enjoy. Keep your mind and your mouth open for new tasty flavors. You may find that Greek cuisine is your cup of tea, while Afghani is not. You will never know unless you try.
